Other than coming down with hayfever for the first time in my life, I didnt get sick as a vegan either. I did get small and weak and unfit in the physical sense.
Now I eat HEALTHY and balanced. Please understand when I say eating meat is good, I dont mean McDonalds and crap like that. I mean good lean meat. Eating healthy is the key, no matter what diet, I think we can both agree on that.
So now I dont get sick either, and I am a lot stronger and feel younger and healthier. I unfortunately still have the hayfever. Although not as bad.
The reason for being healthier as a vegetarian was not because I stopped eating meat, but because I ate a lot of vegetables and good food as you do, and as I still do. Adding meat back to my diet did not make the benefit of eating vegetables go away. I still have that benefit, and now I also have the benefit of what meat provides.
If you want to be a vegan, it is a lifestyle choice based on how you feel about animals. You would be no less healthy however if you kept the current healthy diet and added lean chicken or fish for example, you'd in fact be healthier. Eating meat would not demolish the benefits of a diet high in healthy vegetables.
Like I said before, I still eat tofu. For lunch today I am going to make some bean curd, broccoli, brussels sprouts, carrots and fish drizzled in lemon and rosemary.
Last night for dinner I had a baby spinach, cucumber, cherry tomato and chicken salad with avacado, some nuts, and home made dressing.
For dinner tonight Im going to cut up a bunch of vegetables, like sweat potato, pumpkin, zuccini (sp?), eggplant, etc etc, and roast them with home made chicken kiev. Probably make beetroot soup (barszcz) for an entree.
